Sea Scallops with Tangerine Clementine Glaze

GLAZE

  • 3 cups Noble® 100%
  • Tangerine Clementine Juice
    ¼ cup sugar

SCALLOPS

  • 8 large sea scallops
    2 tsp. chipotle powder or chili powder
    2 cups arugula
    Citrus segments (Orange, Lemon, Lime)

DIRECTIONS

  • To make the glaze, combine ingredients in a sauce pan over high heat. Bring to a boil then reduce to a simmer. Simmer until liquid is reduced by half. Remove from heat.
  • Dust the scallops with chipotle powder. Glaze the scallops with the Tangerine glaze. Sear on high heat until lightly browned on both sides, about 1½ minutes per side.
  • Divide the arugula and citrus segments on 4 plates. Top each with two scallops.
