
Sea Scallops with Tangerine Clementine Glaze

INGREDIENTS
GLAZE
- 3 cups Sun Orchard® 100% Tangerine Clementine Juice
¼ cup sugar
SCALLOPS
- 8 large sea scallops
- 2 tsp. chipotle powder or chili powder
- 2 cups arugula
- Citrus segments (Orange, Lemon, Lime)
DIRECTIONS
- To make the glaze, combine ingredients in a sauce pan over high heat. Bring to a boil then reduce to a simmer. Simmer until liquid is reduced by half. Remove from heat.
- Dust the scallops with chipotle powder. Glaze the scallops with the Tangerine glaze. Sear on high heat until lightly browned on both sides, about 1½ minutes per side.
- Divide the arugula and citrus segments on 4 plates. Top each with two scallops.
