Strawberry Grapefruit Vinaigrette
♦ MAKES 10 Servings
INGREDIENTS
- ½ cup Sun Orchard Grapefruit Juice
- ¼ cup sliced strawberries
- 1 tbsp agave nectar
- 3 tbsp sherry vinegar
- 1 serrano pepper
- 1 cup vegetable oil
- salt & pepper to taste
DIRECTIONS
Remove the stem from strawberries and slice. Remove stem from serrano, cut in half lengthways, remove seeds with a spoon and rough chop the pepper.
In a blender or food processor combine sliced strawberries, chopped serrano, grapefruit juice, sherry vinegar, and agave nectar until mixture is smooth and no chunks remain.
Slowly add vegetable oil while blending. Add salt & pepper to taste.
