Zesty Orange Curd
♦ MAKES 4 Cups
INGREDIENTS
- 1 ½ cups granulated sugar
- ½ cup butter (1 stick)
- 2 large eggs + 4 egg yolks
- ½ cup Sun Orchard Orange Juice
- 1 tbsp Sun Orchard Lemon Juice
- 1 tbsp orange zest (optional)
DIRECTIONS
In a saucepan over medium heat, add all ingredients: orange juice, lemon juice, sugar, and butter, eggs, yolks, and zest. Use a whisk to mix the ingredients together as the butter melts. Stir continuously as the mixture comes to a boil. Allow to simmer for 5 to 6 minutes until mixture starts to thicken. Transfer curd to a glass bowl and press a sheet of plastic wrap onto the surface of the curd. Allow to cool in refrigerator for 4 hours or until cold before serving.
VARIATIONS
This orange curd can be paired with any baked good to give it a zesty indulgent twist. Try filling cream puffs, donuts, or a pie crust with our Sun Orchard Orange Curd.
