Coconut Lime Rice
♦ MAKES 4 Servings
INGREDIENTS
- 1 cup of jasmine rice
- 1/2 cup coconut milk
- 1 ¼ cup water
- 2 tsp Kosher salt
- 1 tbsp of the minced cilantro
- ¼ cup & 1 tbsp Sun Orchard Lime Juice
DIRECTIONS
Combine the rice, coconut milk, water, salt, and ¼ cup of lime juice. Follow setup when using a rice cooker or pressure cooker. For the stovetop, simmer for 12-15 minutes while stirring a few times and check for doneness. Remove pan from heat and let rest for 5 minutes.
Fluff rice with a fork. Mix with minced cilantro and 1 tbsp of lime juice.
