Elote Dip
♦ MAKES 4 SERVINGS
INGREDIENTS
- 6 corn on the cob, shucked
- 1 cup mayonnaise
- ¼ cup chicken stock
- 1 ½ tablespoons hot sauce
- 1 tsp lime zest
- 5 tbsp Sun Orchard Lime Juice
- ½ tsp chili powder
- 1 tsp sugar
- 1 tsp salt
- 1 tsp black pepper
- ¼ cup chopped cilantro
- ½ cup cotija cheese
DIRECTIONS
Measure the honey whiskey and margarita mix into an Old-Fashioned glass. Fill with ice. Add ginger beer and bitters. Garnish.
In a bowl, mix the crema dressing ingredients: mayonnaise, chicken stock, hot sauce, lime zest, lime juice, chili powder, sugar, salt, pepper, and cilantro.
Grill corn without the husks on a grill or stove top on high, rotating every 10 minutes until ends begin to char.
Remove corn from grill and allow to cool. Remove kernels from cob with a sharp knife. Add corn to mixture and sprinkle with cotija, cilantro, and lime juice!
