Southwest Chicken Salad

♦ MAKES 6-8 Servings

INGREDIENTS

  • 5 cups roughly chopped Sun Orchard Margarita Chicken
  • ½ cup mayonnaise
  • ½ cup sour cream
  • ¼ cup diced onion (red or yellow)
  • 1 tbsp finely minced jalapeno
  • 1 tsp ground cumin
  • 1 ½ tsp salt
  • 3 tbsp Sun Orchard Lime Juice
  • ½ tsp black pepper
  • ¾ cup fresh corn
  • ¾ cup diced red bell pepper
  • 1 bunch of finely minced cilantro
  • 1 loaf of sourdough bread

DIRECTIONS

In a large mixing bowl, combine all ingredients. Agitate the mixture with a wooden spoon to mix and break apart the chicken until desired consistency is reached.

Serve on toasted buttered sourdough bread.

VARIATIONS

Substitute croissant rolls for sourdough bread or chicken salad as a side dish. See Margarita Mix
